Oh it will work just fine Dan, I have one and have used it quite often, it even browns the food. I have even made bread & cakes in mine, when the oven of my gas stove was on the blink. I know you will be very pleased with it. Especially how moist it will be on the inside as you slice it.

Thanks, and you too. I just bought a counter top electric 18qt roaster. This pork loin with be my trial run with the roaster (never had one). Fingers crossed! :)
